Cooking Instructions
The brining process makes it nearly impossible to overcook Peameal Bacon, and it’s both leaner and juicer than regular bacon. A uniquely Canadian product, Peameal Bacon is often confused with ‘Canadian Bacon’, which is smoked back bacon, popular in the United States and not actually Canadian at all.
Unlike Smoked Canadian Bacon (which is, let’s not forget, American), Peameal Bacon must be cooked. The best way to prepare is to pan-fry, searing on medium high for 45-60 seconds per side.

Most Americans know bacon as smoked pork-belly and may be confused by the term, especially when it looks more like ham than what is more commonly known as bacon. To make things more confusing, Canadian Bacon is usually presented as basic sliced ham in the U.S. But don’t be confused, it is not ham:
- Cut: Both Canadian Bacon and ham come from pork, but the main difference between the two is that Canadian-style bacon comes from the back of the pig (hence the name back bacon), and is a loin cut. Ham comes from the back legs or butt.
- Preservation method: While there are many types of ham, it is generally a cured meat product which can be sold either cooked or uncooked and could be wet-cured, dry-cured or smoked. In contrast, there is only one true type of Canadian bacon – Genuine Canadian Bacon uses a traditional 48-hour wet-brine and is not smoked.
- Preparation: Canadian bacon comes in both sliced or roast varieties. Ham can come in cubes, as a roast, or even in slices. Ham is served throughout the day and is equally found as a breakfast ingredient, in a sandwich or as a roast at dinner. Canadian bacon, on the other hand, is traditionally a breakfast/brunch food, but you will also find peameal sandwiches or peameal roasts served at lunch and dinner.
- Flavour & texture: Canadian bacon has a mild sweet pork flavor whereas ham (and bacon) taste saltier due to the higher sodium content. Canadian bacon is a leaner cut, therefore it is firmer, but because of its brining method it is still very tender and juicy.
- Nutritional value: Compared to alternatives, such as ham, bacon and even turkey bacon, Canadian Bacon is considered more nutritious. Canadian bacon has more protein, less fat, less calories and less sodium.
