Maple Peameal Roast

This is a truly Canadian dish. Beyond the traditional peameal bacon, the addition of maple syrup makes this a true taste of Canada.

Ingredients

Maple Peameal Roast
  • 1 roast (3.5lb) Peameal Bacon
Children's Variation
  • ¼ cup Maple Syrup
  • 1 tbsp Yellow Mustard
  • ¼ tsp (each) Salt and Black Pepper
Adult Variation
  • ¼ cup Maple Syrup
  • 1 tbsp Dijon Mustard
  • 1 tsp Fresh Rosemary (chopped)
  • ½ tsp Black Pepper
  • ¼ tsp Sea Salt

Directions

Maple Peameal Roast
  1. Step 1
    Preheat oven to 350F/180C.
  2. Step 2
    Cut bacon in half crosswise. Cut three 1-inch slits across each piece.
  3. Step 3
    See below for Children's and Adult variations.
  4. Step 4
    Place a cooling rack on a large rimmed baking sheet lined with foil. Place bacon on the rack.
  5. Step 5
    Bake in center of the oven for 25 – 30 minutes and baste with remaining mixture.
  6. Step 6
    Bake for 50 - 60 minutes, or until a thermometer registers 130F/55C.
  7. Step 7
    Let rest for 5 minutes before slicing.
Children's Variation
  1. Step 1
    Combine maple syrup, ballpark mustard, salt and pepper. Brush one half with basting mixture.
Adult Variation
  1. Step 1
    Combine maple syrup, Dijon mustard, rosemary, salt and pepper. Brush one half with basting mixture.
